I had not heard of tsire seasoning until last week. I was reading a book that described it as ground, roasted peanuts with lots of spices. As soon as I read this I was intrigued and wanted to try it. Fortunately the seasoning is really easy to make and it is absolutely delicious!
I have found this recipe works best when you grind the peanuts to a course sand texture in a food processor. This helps to evenly coat the chicken and better distribute the spices. There are so many delicious flavors in this seasoning. Other than peanuts, the main flavor is cinnamon but there is a lot of allspice, ginger and nutmeg too with a little clove in the background. There is also just a little heat to keep your palette happy but not overwhelmed. I hope that you give this a try sometime! This is my new favorite way to eat chicken.
Instructions:
- 4 ounces roasted, unsalted peanuts (a little less than 1 cup)
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon crushed red pepper
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- ½ teaspoon ground cloves
- 3 boneless, skinless chicken breasts, cut in half so they are about ¼ inch thick
- Olive oil
Chop the peanuts in a food processor until they are the texture of course sand. Mix the chopped peanuts and the rest of the spices together in a bowl to make the tsire seasoning. Pour some olive oil in another bowl. Dip each piece of chicken in the olive oil and then in the tsire spice mix. Place the chicken in a 9 x 13 inch pan. If there is any tsire seasoning left sprinkle it on top of the chicken. Bake at 350 degrees until the chicken is at least 165 degrees, probably about 40 minutes.
