Barbecue Sauce Chicken

This is one of the easiest chicken marinades that I have ever made. You probably already have everything you need to make this. Use whatever barbecue sauce you want, your favorite or whatever you have left in the fridge. When it comes to marinating the chicken, you can marinate it for minutes or for up to two days. If you are going to have a busy day, you can get this in the marinade the day before and then bake it when you get home or you can bake it over the weekend and use it during the week. This chicken tastes great baked or grilled. Pick whichever one is most convenient for you. I tend to eat grilled chicken all summer and then start baking it when the weather gets colder. We do not have central air so I avoid turning on the oven in the summer, plus I love grilled food. Either way this is delicious.

Instructions:

  • 4 chicken breasts, cut into about ½” thick pieces
  • ½ cup barbecue sauce
  • ½ cup red wine vinegar
  • ¼ cup olive oil (not extra virgin olive oil)
  • 1 teaspoon salt

Mix together the barbecue sauce, vinegar, olive oil and salt. Then add the chicken, making sure to cover all of it with the marinade. Let this marinate in the fridge for anywhere from a few minutes to two days. Then either bake it at 350°F or grill it until the thickest part of the chicken is 165°F. Enjoy it hot, cold or warmed up later.
