Casablanca Carrots

These carrots are packed with flavor and are absolutely delicious. The amazing flavor comes from a spice blend that I’ve had in my cupboard for a long time but have kept forgetting to try. It’s called ras el hanout. It’s a Moroccan spice blend that is made up of lots of different, delicious spices. It’s not spicy hot but instead is sweet and savory.

Since this spice blend is from Morocco it made me think of the movie Casablanca; hence the name Casablanca carrots.

These are made with all healthy ingredients and they taste great. If you don’t have time to peel and slice carrots, you can try using baby carrots. I haven’t tried this but I think cutting the baby carrots in half would work just fine.

Satay Chicken

These are a quick and easy side to make. Their slightly sweet and savory flavor can complement so many meals. They were so good with the satay chicken I made the other day (I will be posting that recipe soon).

Ingredients

  • 2 pounds carrots, peeled and sliced fairly thin
  • 3 tablespoons extra virgin olive oil
  • 1 large or 2 small cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ras el hanout

Instructions

Heat the oil, garlic and salt over medium heat. Add the carrots and cook covered until the carrots are tender, stirring occasionally. Take off the cover, add the ras el hanout and cook a few more minutes.
