Chocolate Peanut Butter Energy Balls

Every time I eat one of these it amazes me how similar they taste to a peanut butter cup. They are easy to make too! No baking required and just five ingredients, one of which is water. I hope you give these a try because they are a great snack to have around!

Chocolate Peanut Butter Energy Balls

Instructions:

  • 1 ½ cups rolled oats
  • ¾ cup chocolate protein powder (I used chocolate whey protein powder)
  • ½ cup smooth peanut butter
  • 3 tablespoons honey
  • About 4 tablespoons water
  • ⅓ cup  miniature chocolate chips, optional

Mix together the oats and the protein powder. Add the peanut butter, alternately mixing and cutting the clump of peanut butter into small chunks with the spoon as you stir. Add all of the honey and about 2 tablespoons of the water. Also add the chocolate chips now if you want them. Mix this together and look at the texture. It should be just sticky and wet enough to roll into balls so add up to 2 tablespoons more water if it is too dry. Scoop the batter out with a spoon and shape it. Feel free to make the energy balls any size that you like. I usually make mine into 12 balls that are about 1” in diameter. You can put them in the fridge to firm up a bit or eat as is. Enjoy!
