Creamy Chicken and Stuffing Casserole

I can’t believe that it’s almost Thanksgiving! This year has really flown by. As much as I’m not ready for cold weather to be here I’m excited about the holidays. This casserole is a great one to have on hand for holiday leftovers. It’s also great for those times when you are so hungry for those delicious holiday flavors but the holidays are no where in sight.

This casserole is so delicious and so easy to make. It consists of three simple layers. And if it was just Thanksgiving or Christmas you probably already have two of those layers made.

It starts with a layer of cooked turkey or chicken. Either one is delicious.

Then you make a yummy creamy layer that’s composed of cream of chicken soup and sour cream. I’ll be posting my recipe soon for homemade cream of chicken soup. You don’t need to make homemade but homemade anything always tastes better to me.

Then it’s topped with a lot of delicious stuffing that gets just nicely toasted and crisp while it’s baking. I’m getting hungry just thinking about this.

This is a recipe that my Grandma O taught me. She loved everything about the holidays- family time, decorating and, of course, cooking and baking. I have so many nice memories of us working together in the kitchen getting ready for our holiday dinners. I hope you enjoy this recipe as much as my family does!

Ingredients

  • 4 cups cooked and diced chicken or turkey
  • 2- 10.5 ounce cans cream of chicken soup
  • 1- 16 ounce carton sour cream
  • About 4 cups of cooked stuffing

Instructions

Spread the chicken in the bottom of a 9 inch by 13 inch pan. Mix the soup and sour cream together and spread over the chicken. Then spread the stuffing over the soup and sour cream layer. Bake at 350 degrees until the casserole is heated through and the stuffing is nicely browned, about 45 minutes.
