This soup has all of the qualities that I like in a recipe. It’s quick and easy to make, tastes delicious and warms up beautifully. The trifecta of awesome recipe traits!
This is a recipe that my mom came up with and it is so good. It kind of reminds me of an Italian version of chili. Instead of ground beef there’s sweet sausage and there are cannellini beans in addition to the kidney beans. And there’s lots of savory basil to bring all of the flavors together.
Another really nice thing about this recipe is that most of the ingredients are probably already in your pantry, even if you haven’t shopped in a while. As long as you have a pound of sausage in the freezer all of the other ingredients can be stored in your pantry and spice cupboard. This gives you the flexibility to have a delicious meal when you’re limited on time and/or groceries.
I hope you enjoy this as much as we do. It’s one of our favorite winter recipes! All you need is a loaf of bread to go along with it and you have a hearty meal that should satisfy even the biggest eaters in your house.
Ingredients
- 1 pound sweet sausage, browned
- 1- 15 ounce can red kidney beans, drained
- 1- 15 ounce can cannellini beans, drained
- 4 cups vegetable or chicken broth
- 1- 14.5 ounce can diced tomatoes
- 2 tablespoons dried minced onion
- 1 tablespoon dried basil
Instructions
Simmer all of the ingredients for about 1 hour.
