These kidney beans have it all- they’re delicious, healthy and easy to make! And they smell so good while they’re baking!
The little bit of ham and bacon gives these a yummy smoky flavor. Feel free to leave out the ham and bacon if you want to make a vegetarian version of this. You can add a little smoked paprika if you want to still have the smoky flavor.
The wine and the tomato paste create a great sauce. It infuses all of the veggies with such a fruity and savory taste. These can also be made in the crock pot, just make sure to cook it until all of the vegetables are tender. I hope you enjoy these as much as we do!
Ingredients
- 1- 15.5 ounce can red kidney beans, drained
- 1- 15.5 ounce can red kidney beans, undrained
- 1- 6 ounce can tomato paste
- 1 cup red wine
- 1 cup diced ham, optional
- 1 medium onion, diced
- 1 large green pepper, diced
- 3 pieces cooked bacon, optional
Instructions
Mix the tomato paste and wine together to make a sauce. Mix all of the remaining ingredients together with the sauce except the bacon and put in a casserole dish. Crumble and sprinkle the bacon on top. Bake the beans at 350 degrees for about 1 ½ hours or until the vegetables are tender.
