This recipe uses so many delicious spices! There are hot spices, savory spices and sweet spices that combine to create a wonderful variety of flavors. Don’t think this has to be spicy though. You can make this as mild or as spicy as you want based on how many chili flakes you use. This recipe makes a moderately spicy chicken so decrease or increase the chili flakes based on your heat preference.
The lime juice and rum in the marinade tenderizes the chicken and infuses it with yummy tropical flavors. Some brown sugar adds a little extra sweetness to make it even more irresistible.
This is a great recipe to make ahead and then warm up throughout the week for easy meals. It doesn’t take long to prepare either. I am definitely planning on making this a lot!
Ingredients
- 2 tablespoons brown sugar
- ½ teaspoon garlic powder
- 1 tablespoon minced dried onion
- 1 tablespoon ground allspice
- ½ teaspoon chili flakes, add more or less based on spice preference
- 1 teaspoon ground ginger
- ½ teaspoon pepper
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 2 tablespoons rum
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 3 chicken breasts, cut into ½ inch thick pieces
Instructions
Mix all of the seasonings together and then mix in the liquid ingredients. Marinate the chicken for at least a couple hours and up to one day. Put the chicken in a 9 inch by 13 inch pan and bake at 350 degrees for about 40 minutes or until the chicken is at least 165 degrees.
