Peach Pie

Peaches are one of those wonderful things that go with summer. I always look forward to eating lots of them while we can get them. There is only a brief period of time that we can get them fresh and ripe from local orchards, about three weeks at the end of summer. So I make sure to get my fill of them while they are available. But as much as I enjoy eating fresh peaches I have to make at least one peach pie before the bounty of peaches is gone for yet another year.

Peach Pie

Peach pie is one of my favorite desserts. The peach flavor is so delicious and then there is cinnamon and sugar too all encased in a flaky crust. I am getting hungry just thinking about it. If you like pie, I highly recommend trying this out when you get a chance. Your family will be very excited when they smell this baking in the oven.

Instructions:

  • 5 cups peeled and diced peaches
  • ½ cup packed light brown sugar
  • ¼ cup white sugar
  • 2 T granulated tapioca
  • 1 teaspoon lemon juice
  • ¾ teaspoon cinnamon
  • 9” double pie crust

Mix all of these ingredients together and put in a 9” pie plate with a double crust, making sure to put vent lines in the top crust. Bake at 350°F for about 80 minutes. It is done when the crust is light brown and the filling is bubbling up through the vent lines in the top of the pie.
