Beef and Barley Soup
A hearty and healthy soup that's easy to make on the stove or in the crockpot.

Ingredients

pound
beef, cut into bite size pieces
4
cups
chicken stock
1
cup
water
¼
teaspoon
dried marjoram
¼
teaspoon
dried thyme
⅛
teaspoon
ground black pepper
1
bay leaf
3
medium carrots, diced
2
stalks celery, diced
1
medium onion, diced or 1 tablespoon dried minced onion
½
cup
pearled barley
Salt to taste
Sour cream for serving, optional
Instructions
Crockpot Instructions:
Put all ingredients in a crockpot and cook on low for 8 hours.
Salt to taste and serve with sour cream if desired.
Stove top Instructions:
Simmer beef in broth and water, covered, for 1 ½ hours.
Add the rest of the ingredients and simmer 45 minutes longer.
Salt to taste and serve with sour cream if desired.
