Beef and Barley Soup

A hearty and healthy soup that's easy to make on the stove or in the crockpot.

Servings: 8 cups
Ingredients
  • 1 pound beef, cut into bite size pieces
  • 4 cups chicken stock
  • 1 cup water
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon dried thyme
  • teaspoon ground black pepper
  • 1 bay leaf
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced or 1 tablespoon dried minced onion
  • ½ cup pearled barley
  • Salt to taste
  • Sour cream for serving, optional
Instructions
Crockpot Instructions:
  1. Put all ingredients in a crockpot and cook on low for 8 hours.
  2. Salt to taste and serve with sour cream if desired.
Stove top Instructions:
  1. Simmer beef in broth and water, covered, for 1 ½ hours.
  2. Add the rest of the ingredients and simmer 45 minutes longer.
  3. Salt to taste and serve with sour cream if desired.
