Preheat the oven to 350 degrees.

Pour the water into a 9 inch by 13 inch pan.

Whisk the cornmeal, salt and pepper into the water.

Bake uncovered for 40 minutes.

Stir and add the butter and cheese if using.

Continue to bake uncovered until the liquid is absorbed and the consistency is creamy, about 10 more minutes.

Let cool 5 minutes before serving.

Leftovers can be sliced and browned with some butter or oil in a pan.
